Jalapeno Popper Chicken

A savory, cooked chicken breasts smothered by a melty cheese that come speckled with bits of thick-cut bacon and diced jalapenos.

  • 1.5-2 lbs chicken breasts or thighs
  • 8 oz cream cheese
  • 1 cup cheddar cheese
  • 2-3 jalapenos seeded and diced
  • ½ cup cooked bacon pieces
  • Garlic powder
  • Onion powder
  • Salt and Pepper


  • Preheat oven 350 and grease a 9x13 baking dish.
  • Cut a slit in the top of the chicken to create a pocket for your stuffing.
  • In a bowl mix softened cream cheese, ½ cup of cheese (or however much your heart desires), bacon pieces and diced jalapenos until well combined.
  • Season your chicken on both sides with garlic powder, onion powder, salt and paper.
  • Lay chicken cut side up and fill your pocket with the mixture and top with a little cheese and bacon. 
  • Bake at 30-40 mins until chicken is done.
