Baked Zucchini
Louise MosakowskiZucchini spears that are seasoned with Mozzarella and herbs and roasted to tender perfection.
Ingredients
- Zucchini
- Olive oil
- Garlic powder
- Salt
- Pepper
- Fresh tomatoes
- Mozzarella Shredded or Sliced
- Basil
Instructions
- Slice zucchini in ½ length-wise
- Slice off a small bit of the bottom to make it flat, so it won’t roll
- Place zucchini on a sheet pan top side up
- Brush the top of the zucchini with olive oil
- Sprinkle with garlic powder, salt & pepper
- Top with sliced fresh tomatoes
- Top tomatoes with shredded or sliced mozzarella
- Sprinkle with basil (fresh is preferred)
- Bake at 350 degrees for 20-30 minutes, until soft
