Baked Zucchini

Zucchini spears that are seasoned with Mozzarella and herbs and roasted to tender perfection.


  • Zucchini
  • Olive oil
  • Garlic powder
  • Salt
  • Pepper
  • Fresh tomatoes
  • Mozzarella Shredded or Sliced
  • Basil


  • Slice zucchini in ½ length-wise
  • Slice off a small bit of the bottom to make it flat, so it won’t roll
  • Place zucchini on a sheet pan top side up
  • Brush the top of the zucchini with olive oil
  • Sprinkle with garlic powder, salt & pepper
  • Top with sliced fresh tomatoes
  • Top tomatoes with shredded or sliced mozzarella
  • Sprinkle with basil (fresh is preferred)
  • Bake at 350 degrees for 20-30 minutes, until soft
